My lunch on Saturday: Pasta Italiano soup, mixed exotic fruit, cottage cheese, about 420 calories

I was talking to a woman yesterday, who like me is borderline diabetic. We were swapping horror stories about blood sugar crashes and what causes them. She told me that fruit actually helps stabilize her blood sugar, but ONLY when she eats it in moderation, like 4 ounces at a time. Her doctor actually told her that. When she said that it occurred to me that she is right! When I first started this fruit - in - the - morning - plan, I wasn’t having the blood sugar problem. It was only when I started eating larger quantities of it that it became in issue.

So now I know how to completely eliminate the blood sugar crashes. Along with cutting back on my fruit servings and doing what I said in the previous post about adding fat and protein to each meal, I will be just fine (and I have been the past 2 days).

Anyway, eating healthy has truly become second nature for me. The weight is coming off, my stomach is shrinking each day and I am feeling a LOT better. I exercise pretty much every day too. I’ve gotten into a routine though where I only exercise for about 25 minutes a day. That probably seems like too little for some of you, but it’s doing me just fine. The weight is coming off at a healthy rate and that is what counts!

Solution

I found the solution to hypoglycemia. I added oatmeal and a piece of Laughing Cow cheese in with my breakfast, then had some nuts with my second fruit helping of the day. Problem solved!

I got an excellent workout in today although it’s been crazy busy. I will update more later… also keep an eye out for a new layout coming soon.

… is kicking my butt. Adding the protein cereal to my breakfast did not help matters.

I am going to have to start eating something like oatmeal with my breakfast (like one of you suggested) along with a protein and a fat serving. Fruit alone - even with cereal - is making me so weak and on the verge of passing out that I cannot stand it anymore. I did some research online and found this.

Sadly, my delicious iced fruit bars are going to have to be thrown out, they have too much sugar and not enough fiber. No more high-sugar items, all they do is cause trouble.

I’m not going to change much else, I am still going to continue eating healthy, nutritious foods. And exercise.

Quick Update

Just wanted to do a quick update and say I’m still doing good in the diet/exercise department. I’m still eating VERY healthy. My workouts are gaining in intensity, time and resistance every day. Muscle memory is a wonderful thing.

Best of all, the scale has started moving downwards again. I have lost 3 1/2 pounds in 2 days.

My main food staples these days are fresh fruit, organic soup, lean protein like chicken, fish and egg whites, grilled vegetables, spinach salad, high fiber cereal, iced fruit bars, occasional laughing cow Baby Bel cheese and cottage cheese. I’m still having problems with my blood sugar crashing though, I am trying to find a way to stabilize it. As of today I’ve started adding high fiber/protein cereal to my morning meal of fresh sliced up fruit. We’ll see if that helps.

The Scale

The scale truly baffles me.

Truly.

Truly.

Grrr… I know I’m building muscle like crazy right now and all, but I’d really like that damn number to go down.

I mean, seriously.

I guess it’s time to cut back a little. Today I’ve already cut back without really meaning to and will end up consuming around 1300 calories once I’ve had dinner (which is currently in the oven and will be ready soon).

Damn scale, move it! $@$^%$?!

Later update:

Well, I finished dinner about 40 minutes ago. I want to take a walk along the river for additional exercise (already did 30 minutes of vigorous elliptical and 10 minutes of yoga earlier) but it’s still 101 degrees with a heat index of 104. No thanks…

I am still on my health kick… even more so now than ever. I am determined to get my amazing figure back once and for all. I recently found some old pictures of me from my early 20’s, and man… I miss my fabulous figure from those days! I have some pictures of me in a bikini at Venice beach with an old boyfriend, and damn did I look good (and I’m not afraid to say it). I’d even be comfortable posting them here if I can figure out a way to get them scanned in.

Yesterday my cousin’s wife and I went to lunch at an Italian restaurant (where I had less than half of a pasta dish) then we hit Whole Foods. I went to town and stocked up on more fresh fruit, organic soups, organic juice, organic cereal and organic salad. I have a menu prepared for my meals today. Estimated calorie counts are in parenthesis.

Breakfast - plenty of fresh cut up mango (140) & scrambled egg whites (90), coffee w/vanilla cream (60): 290
Snack - 1 large organic white peach (60), 1 serving of nuts (170): 230
Lunch - Organic roasted red pepper soup (mmmmmm) (220), half of a turkey/cheese sandwich(110), organic spinach salad w/2 tsps of organic dressing (100): 430
Snack - 1 Baby Bel Laughing cow cheese (70), 1 serving black olives (25), 1 pear (80): 175
Dinner - Roasted skinless boneless chicken(125), Steamed veggies (50), Cottage Cheese (90): 265

Miscellaneous - 1 orange sorbet ice-cream bar (60), 1 EmergenC drink (25), Iced Green Tea (0), Vitamin B Complex (0), 1 Omega 3 chew (10), 1 glass lemon water (15): 110

Total calories: 1500

In case anyone was wondering, my psychiatrist told me to go on a B vitamin and Omega 3 because it’s supposed to help with the physical damage my drinking caused. The EmergenC drink has all my daily electrolytes and several other vitamins.

Today’s exercise will be the elliptical, stretching and weights. It’s too hot outside to go for a walk!

On a final note, I am feeling so much better physically these days! Almost back to normal… almost.
