Wednesday Night Update

It’s 2am and I should be in bed but… I had company over pretty much all evening - we watched the storm from my 9th floor balcony, it was pretty amazing! We had some severe thunderstorms roll in this evening.

Calorie-wise today I didn’t eat much at all - it only totals up to about 875! Very low for me but I am not worried about it since tomorrow I will likely have around 1300. I did 37 minutes of very fast walking this afternoon for exercise.

I am noticing some significant changes in my lower body… now I have to wait for my lower stomach to catch up. I am PMS’ing hardcore right now so I absolutely refuse to get on the scale.

This post was mostly a lot of disjointed rambling, for which I apologize, but I am pretty tired! Bedtime.

Here is a quick dinnertime, low-cal AND low-carb meal idea:

1 generous bowl of romaine lettuce (30), 1/2 serving fat free ranch dressing (40) - 70
1 2% cottage cheese cup - 90
1 sugar free/fat free yogurt - 60
Total: 220 calories

Today’s Menu

I figured I would post my menu for today… it equals out to about 1100 calories.

B- Wheat Chex w/skim milk – 250
S- Eggbeaters, 4 pieces microwave bacon, 2 pieces toast w/no butter – 245
L- Laughing Cow Cheese/tomato sandwich*, 1 rice cup – 335
D- Grilled chicken, mixed salad** – 150
S- Cottage Cheese, mixed salad** – 120

* Today’s laughing cow cheese/tomato sandwich was made with 2 pieces of low-cal bread, toasted (80), 2 wedges of Laughing Cow Swiss Cheese (70), 5 thin slices of tomato (15) = 165 calories. Made with an extra cheese wedge for added yumminess.
**I made the mixed salad last night, and it consists of: iceberg lettuce/carrot mix, cucumbers, tomatoes, tiny pieces of ham, mushrooms, yellow & orange peppers.

Calories are estimated for the salad because it’s mostly veggies! No fruit in today’s plan because I am trying to limit blood sugar spikes. (And because I am out of fruit currently).

Friday Update

I got up super-late today and I have a lot of stuff to do today/tonight, so… this will be a fairly quick post!

I have decided that it’s very important that I exercise today, so I am about to hop on my elliptical for an intense 30-minute level 8 workout. Once I’m done showering and getting ready, I’ll be heading over to my sister’s place to hang out for a few hours. Then I’m supposed to be going to a dinner gathering with some friends, which will likely take up the rest of the night. (I tend to stay out VERY late with this particular crowd, especially on the weekends). Food will be involved, so I’ve only had 360 calories so far today. The rest will be for dinner. Alcohol won’t be involved since I haven’t had a drink in 28 days, and this is a non-drinking crowd anyway.

Delicious 100-calorie breakfast of champions:

1 carton lite&fit yogurt (60)
1/4 cup of Fiber one (30)
A handful of various berries (raspberries, blueberries and blackberries) (10)

Mix together and enjoy!

My Favorite Mini-Meal

Since currently I am doing a mini-meal type of eating plan - 4 mini-meals a day - I’ve been working hard to come up with different ideas for meals that taste good, are generally filling AND are healthy.

So far my favorite mid-day mini meal is this:

  • 1 cup (container) of whole grain brown rice (170 cals, 2 grams of fiber, 3g of protein)
  • 1 small pear (80 calories, 4 grams of fiber)
  • 1 container of Breakstone’s 2% low fat cottage cheese (90 calories, 10 grams of protein)

Total: 340 calories, 6 grams of fiber, 13 grams of protein
Dairy, protein, fruit and grain

Since I am also currently keeping track of calories, I am going to start posting my day’s count of calories each night here on this website. It’s a good way to keep me on track and make me accountable, I think…

So far today it’s 3:45pm and I’ve consumed 510 calories (I got up late). I know I’ll be up and out late tonight, so I am saving as many calories as I can for later…

Finally Home & Doing Well

I’m finally home! What a relief. I slept better last night than I have in weeks. The fever disappeared as quickly as it came on. I have no idea why or what caused it and am baffled. Perhaps it is the fact that I’ve been guzzling high amounts of vitamins for the past few days and my stress load went WAY down?

I got home yesterday afternoon.

Upon getting on the scale this morning, I have lost 4 pounds already from my “horrifying” number on the scale on Friday morning. I exercised on the elliptical yesterday afternoon, ate a healthy (although late) dinner, and got some fabulous sleep. I went shopping at Whole Foods last night and stocked up on tons of super healthy stuff again. I LOVE LOVE LOVE that store! I had 1/2 cup of organic blueberry/strawberry granola and some fresh mango for breakfast. My snack at 11am will be a banana and pineapple. Lunch will be organic brown rice, veggies and a tiny serving of whole wheat pasta. My afternoon snack will be one serving of seeds or nuts. Dinner will be grilled boneless skinless chicken breast tenders, veggies and maybe more brown rice.

Exercise today will be 30 minutes on the elliptical (as soon as I’m done with this post) and a walk later today if the weather clears up. If it doesn’t, I’ll head down to the gym downstairs and do some treadmill work.

I’ve been keeping a very close eye on my portions the past few days (which may be a reason I’ve started losing). I have been measuring out portions or going by what the packaging says instead of just guessing or eating as much as I want.

Anyway, I’m inspired to see I’m already losing weight… and every day I will record how much weight I’ve lost from that insanely high number I saw Friday! So today…

4 pounds lost.

My Last Night On The Road

About 30 miles west of Syracuse, NY

Tonight is my last night on the road (until my return trip, that is). I’m in Syracuse NY tonight instead of my previously planned Buffalo. Tomorrow I literally only have a five hour drive. I want to get home to my Nashua apartment early in the afternoon because it’s going to be a mess. Some of you may remember that I posted about my last night/day there - I was severely hungover from doing shots of flavored vodka and rum with B. So I can’t recall the exact way I left the apartment, only that it’s not going to be nearly as clean and orderly as my Tulsa one. Gulp. I’ll also have to do grocery shopping and laundry.

I’m hoping my internet connection will be working this time! I’ve been paying the bill, but they’ve had tons of storms out there this summer while I was gone. Who knows if something is broken again like last time. If it is, I will hit a bookstore for an internet connection.

Onto food… I am bummed because I ate some sugary crap today on the road. Just a little bit, but as far as I’m concerned it’s too much. However, overall I ate very little on the road today yet again, so I ordered a delicious room service meal that I am waiting for at this very moment - grilled chicken, a potato, and garden salad.

The good news is that I will be able to use my gym membership the entire 2 weeks I’m in NH. I plan to go every single day! And I still have my stationary bike out there to use. I’ll have to get a few good workouts in on it since I’m leaving it behind.
