Forgot To Mention…

I forgot to mention in my post below that I’ve taken to buying a wide variety of veggies to juice – stuff I’ve never juiced before, and it’s all really amazing! I now juice: kale, chard, spinach, carrots, celery, cucumbers, red bell peppers, dandelion greens, asparagus, cilantro, tomatoes and cabbage. Plus all of the usual fruits. I’ve been trying various recipes found in my raw juicing books and on the internet. Cabbage juice actually tastes fantastic, by the way.

I’ve also started to use the juicing pulp because I feel guilty throwing away veggie goodness, so what I did yesterday and will again today is use the pulp mixed up for my lunch or dinner salad. It’s already all shredded and mixed up, so I throw it into a bowl, spritz a tiny bit of olive oil on and a dash of sea salt, maybe add some seeds, and there you go! An interesting salad. I know I can also throw it into a blender or food processor and make soups and smoothies from it, which I also plan to do at some point.

This morning I had a ‘liver-cleansing’ veggie juice, made with the following:

4 carrots
1/2 cucumber
handful of dandelion greens
1/2 lemon

(I added in a couple of orange slices to sweeten it up a bit more). It was delicious!

Hey TT, thanks. Not yet! I tried calling them a couple times in late afternoon but got no answer, they may have limited hours or something. I will try again sometime this week though.

Juicing asparagus and then using the pulpy goodness for a “salad”? Why have I never thought of that? Sounds delish! I sold my juicer to a woman who shipped it to Jamaica. They are huge into juicing there and I was so sick of cleaning it with a toothbrush. I also hated the loud noise, but your recipes make me miss it. Ever set up that grow garden? I’m about to sell that as well in preps to move (again). I enjoy your “diary”, it’s very authentic.
