My sleeping schedule is still a bit messed up, which is why I’m up at 1:30am! However, since I slept for about 10 hours, I should be able to stay up until 8 or 9pm tonight (Tuesday), which will allow me to get up tomorrow in the morning like a normal person again.
In the past few days I’ve tried a couple of new fruits and veggies… one is star fruit (Carambola):

Which looks like this cut up (hence its name):

Cute huh? And delicious! This fruit tastes like a cross between Jicama and a Granny Smith apple. The entire fruit is only around 40 calories and has lots of vitamins and antioxidants, plus a good amount of fiber.
I got them at Whole Foods… of course. I know Whole Foods has a bad rep among some people for being way too expensive and yuppy. However, it’s a Godsend to places in the winter where you can’t get many varieties of fruit and veggies, like here in Tulsa! An absolute Godsend. I’ve scoured this city and there are no other places you can get exotic fruits like mango, starfruit, and other organic fruits. At other grocery stores in this area, the only selection of organic fruits is apples and oranges! So I will continue to support Whole Foods by buying fruit and veggies and stuff there. They are providing an AMAZING service to us organic fruit junkies.
I also tried Swiss Chard for the first time yesterday. It’s pretty good – a little bitter but not bad. I had a salad with chard, herbs, red peppers and yellow tomatoes for lunch.
So onto other things… for some reason the past few days I’ve had a bloated/puffy looking face and a somewhat bloated stomach. I have no idea what caused it, but I’m happy to report both have finally gone away.
I’m officially back to exercising… I did 45 minutes on the elliptical yesterday and plan to take a 45-minute walk today. The funny thing is that even though I didn’t work out on the elliptical for a few weeks, I didn’t seem to lose any muscle tone. I could still take it up to the highest level (8).

I’ve always seen these things at my grocery store but never tried them! Looks like I have a trip to make to go pick some up. Thanks
And, do you happen to know the average amount of calories your eating in a day?
omg!!!! its sooo cute! I’ve always wanted to eat it but I never bought it cause it was expensive but now that you say its tasty I think i will buy it. maybe your face was puffy from too much sodium? I have like a low sodium tolerance If I eat fries (which i have given up because they make me ugly! haha) i get a really bloaty puffy face.
I little tip for eating/cooking dark leafy greens like swiss chard is to saute them with a little chicken or vegetable stock (low sodium) to release the bitterness. Also adding a pinch of nutmeg will so the same thing. Swiss chard and kale are GREAT in soups and will add lots of flavor as well as vitamins and minerals!
Keep up the heatlhy eating, you are doing great!!!!
The WF near me seems to have only conventionally (not organic) grown tropical fruit this time of year, lucky. I have been doing the green shake that OSG recommends, my body loves it. I have this in the a.m. and spend all morning buzzing around. Yesterday I added a small banana to it as an afternoon snack, again buzzing around
1cup of light soymilk
handful of baby spinach
2 leaves of chard or kale
1tbs ground flax(OSG doesn’t grind, this will only give you fiber. If you grind you also get the omega 3)
I also add 1tsp of powder probiotic blend
Um, that is the saddest star fruit I’ve ever seen! It looks like it’s way past it’s sell by date! But like you say, getting tropical fruits in Tulsa in Feb can’t be easy.
By the way, have you done any research into the whole movement of seasonal eating? There’s much to be for it in terms of limiting your carbon footprint (not eating veggies that have travelled half way across the world) and also providing you with the nutrients you need specific to the season. i.e. – in winter you need more vitamin C – hence the availability of oranges! As you know, nature is more clever than we give it credit for!
